Chicken and Chorizo Tart

As you may have guessed by now, I love simple meals that can be made quickly without too much hassle. And my chicken and chorizo tart symbolises just that. Layering food on top of pastry has to be one of the easiest and oddly satisfying things to do. The beauty of this dish is that, although involving many ingredients, there is very little preparation involved other than layering on to the pasty. I know I have used measurements, but everything is roughly estimated from packet sizes and I never measure things out.

  • 1 packet of puff pastry
  • 150g passata sauce
  • 100g grated cheddar cheese
  • 50g pre-cooked chicken
  • 6 slices of chorizo
  • 6 slices of mozzarella
  • handful of spinach
  • 6 tsp basil pesto

Now, for the really simple bit. All you have to do is layer the ingredients onto the puff pastry, preferably already on the tray you’re cooking it in the oven. Passata goes first and the rest is basically up to you, do it however you wish. Even swap out some ingredients if you want, the world is your oyster!

Cook in the oven at 200 degrees (180 fan), for 15-20 minutes, and there you have it, a tasty one tray meal in less than half an hour.
